I don't know about you, but after a few months of indulging myself while social distancing, my body was ready for something healthy. I am going to be honest with you: eating greens is not my strong suit. Salads I like, but I've always struggled with cucumbers, broccoli, Brussel sprouts and even carrots! After many years of trying re educate my pallet, I was able to stomach some broccoli, carrots and Brussel sprouts, but it had to be done just right. So, I knew that trying to eat healthy after all that indulging was going to be a struggle. I decided to force myself to make some green juice, but all the recipes I found used cucumbers. I hate cucumbers! But I just had to try it. And guess what? I loved it! My kids loved it!
So here is my recipe:
1 whole cucumber
2 cups of spinach
2 lemons
1 to 2 apples
a squirt of minced ginger
First, peel the lemons so it is not too tart. I juice everything but the spinach and the ginger. Then I add the juice to the spinach and ginger and blend that together. I feel it is more filling that way and I get more out of the spinach. I do sweeten it a bit with some stevia, but that is totally optional.
